What you'll need:
1/2 pound of raw organic cashews
1 T of coconut oil
1 T coconut butter (optional)
a pinch of salt
Maple syrup to taste (optional)
What to do:
Coat the cashews in coconut oil and a pinch of salt, roast in a 400 degree oven until golden.
Add cashews to food processor with coconut oil and maple syrup and blend until smooth.
It takes a few minutes to become smooth, if you're like me you will panic you made expensive cashew wet sand and then all of the sudden it will come together and all will be right again. Make sure to treat yourself to a banana with WARM cashew butter right out of the food processor. Store in a sealed container (an old peanut butter jar is perfect). My preferred method of eating this cashew butter is off of a spoon.
