Herb Garden Zhug

What you'll need:

  • a blender or magic bullet 

  • a pan to toast spices

  • a clean jar for storage 

  • a tolerance to heat 

Ingredients: 

  • 1/2 tsp coriander seed

  • 1/2 tsp cumin seeds

  • 1 T black pepper

  • 1/2 T Salt

  • 1 T cardamom seeds (if you buy them in the pods just break them open)

  • 4 cloves of garlic 

  • 4 serrano peppers

  • 1 cup of parsley

  • 2 cup of cilantro 

  • a few leaves of mint, basil, thyme (a little bit of whatever else you are growing in your garden)

  • juice and zest of 1 lemon

  • 1/2 cup to 3/4 cup of olive oil 

In a pan, toast your coriander, cumin, pepper and cardamom. (you'll know their toasted when you can smell them.)

Add toasted seeds and 4 gloves of garlic to your magic bullet, blend until it becomes a paste. Add halved serranos, cleaned herbs and olive oil in intervals until everything is fully incorporated. Store in your clean jar in the fridge for 1-2 weeks. 

Enjoy on falafel, eggs, toast, vegetables, meat, or right off of the spoon.
