Peanut Butter and Chocolate "Fat Balls"

Full of healthy fats that will fill you up and satisfy your sweet tooth. 

  • 1 cup organic coconut shreds

  • 1/3 cup coconut oil 

  • 1/2 cup peanut butter

  • 4-7 (depending on size) medjool dates (pitted)

  • 1/2 cup cashews

  • 1/4 Cup Chia Seeds

  • 1/4 cup Flax seeds

  • 2 tbsp cocao powder 

  • 2 TbSP maple syrup 

Ive tried this with a, food processor, ninja blender, magic bullet, nutribullet. I found that the food processor and ninja allowed a smooth consitancy without it becoming runny. you can use a Magic bullet and the nutribullet with this recipe but i found i had to add more coconut oil to help everything come together and they came out more like fat cookies instead of fat balls. 

Blend until it all comes together but is still chunky. with your hands or a spoon roll out bite size balls (or cookies) onto wax paper and freeze. once frozen, Transfer into a sealed container to prevent freezer burn. Take 1 out of the freezer and let thaw for a few minutes before eating. 

These are perfect to satisfy your sweet tooth or to hold you over for your next meal. I like to recommend this recipe to people who eat a lot of protein bars and want to reduce their use of plastic. All of the ingredients can be purchased in bulk and it takes less than 10 minutes to make.
